Recipes calling for two attachments in sequence create a practical problem when you only have one bowl.
The classic case is anything folding whipped egg whites into a batter, since the whites need the whip and the batter needs the flat beater.
Doing the whites first means washing the bowl before the batter, and doing the batter first means the whites go into a bowl with residue on it, which interferes with whipping.
Egg whites are particularly unforgiving here, since any trace of fat prevents them reaching full volume regardless of how long you whip them.
