Why the Blade Changes the Answer
With the S-shaped chopping blade, everything stays in the bowl and gets cut repeatedly. Ten seconds gives you a rough chop and thirty gives you a purée, from identical ingredients.
Time is the only variable, which means you need a way to stop precisely. That is what pulse is for.
With a slicing or shredding disc, food passes through once and lands in the bowl below. It cannot be cut twice, so running longer does nothing except process more food.

What I Actually Do
Jalapeños and vegetables get pulsed, because the difference between diced and mush is a few seconds and I want to see where it is between bursts.
Cheese runs continuously. It goes through a shredding disc, the disc decides what comes out, and there is nothing to over-process by leaving the motor running.
That split was not a decision so much as what the machine makes obvious once you use it for both jobs.

Why Over-Processing Happens So Fast
The speed at which chopped becomes mush surprises people, and the reason is that the blade is doing far more work than it appears to.

Moisture accelerates it. Once cell walls break, food releases water, which makes the mixture move more freely and get cut more evenly, which releases more water.
